This was my first one. The algorithm has been pushing them hard, and I happened to have a ham in brine someone wound up not needing for Easter so I went for it
63 days in brine, 225 to 150 internal then 350 till 203 internal.

I make a good ham, way better than any store bought, but pushing it that far? Absolutely next level. Especially with some red slaw and vinegar sauce on top.
