Most glider pilots I know use a Camelback. Strap it down on the deck behind your head and put the nozzle over your shoulder. Just bite the tip to open it, I usually half collapse a plastic bottle of water, put it in the freezer and put it inside the back pack. No hands required to use. In a long race, I don't see why you couldn't strap it to the back of your seat.
